Oreo Brownies






Ingredients
2 rows of an Oreo package
1 Brownie mix + all ingredients on the back
4 oz cream cheese
1 bag of milk chocolate chips

Directions
Make the brownies according to the box directions. Allow them to cool.  While cooling crumble the Oreos and mix in the cream cheese.  This together makes a mixture similar to an Oreo ball.  Once the brownies are cooled, put a generous amount of the Oreo mixture on top of them.  Then melt the chocolate chips and drizzle on top to give the Oreo mixture a covering.  When melting the chocolate be sure not to burn it! If you do not think your chocolate is thin enough, add some shortening!  When the chocolate is still wet, you can add some crumbled plain Oreos to the top to help with the appearance!

Buffalo Chicken Tacos


Buffalo Chicken
3 Chicken breasts (fresh or frozen)
1/2 jar of Texas Pete Buffalo Sauce
1/4 C. chopped jalapenos
1/4 C. chopped red onion

Toppings
Tortilla taco shells
Avacado
Celery
Red onion
Bleu Cheese
....ranch if you have a sensitive pallet...

Directions
In a crock pot place the chicken, buffalo sauce, jalapenos and red onion.  If the chicken is frozen it will take longer to cook.  With being in school I typically will put it on low for 6 hours or 3 hours on high when frozen or fresh.  If the meat looks like it is drying out add more of the buffalo sauce.  When cooking things in the crock pot, time is key, it just continues to get more tender.  When it is fully cooked, use two forks to shred it.

Now it's time to assemble.  Usually it will yield like 5/6 tacos, however that's all dependent on how full you fill them.  After the chicken, put the toppings on and dig it.  Typically I serve it with corn, black beans and a spring salad.
